Magenta's Garden Sandwich

Ingredients


    * Sweet potato, 1 cup, cubes
    * Green Peppers (bell peppers), 1 cup, chopped
    * *Tomatoes, red, ripe, raw, year round average, 2 medium whole (2-3/5" dia)
    * Bread, whole wheat (including toast), 4 slice
    * *Margarine Nuvel, 4 tsp

Directions

Fry sweet potato and peppers with 2 tsp margarine, until cooked. Set aside after toasting lightly, fry bread in remaining margarine. Add tomatoes to fried veggies in pan serve when tomatoes are cooked, placing veggies on bread in a open-faced sandwich style.
