Ingredients

    1 1/2c water, 11/2c br. rice(uncooked), 1 12oz. can tuna, whites of 2 eggs plus 1 whole egg, 1 14oz. can diced tomatoes,drained, 1c. plain bread crumbs, ( minus 1 tbsp reserved for topping), 2 medium green onion, finely chopped, 3/4tsp oregano, 1/2tsp.seasoning blend, 1/8tsp salt, 3 oz. light cream cheese,softened, 1/3c cheddar cheese,grated,2 plum cherry tomatoes optional.

Directions

preheat oven to 350. lightly spray pie plate with vegetable spray. In a small saucepan, bring water to a boil over high heat. Stir in rice Reduce the heat and simmer, covered, til cooked. Meanwhile, in a large bowl, whisk together the tuna egg whites, and egg. Stir in the tomatoes, bread crumbs(except for 1 tbsp), green onions, oregano, seasoning blend, and salt. Gently, stir the cream cheese into the cooked rice until thoroughly combined. Stir into the tuna mixture. Spread evenly in the pie plate and sprinkle with the reserved bread crumbs. Bake for 25 mins.Removefrom the oven and sprinkle with the cheddar. Return to the oven and bake for 2-3mins. or til melted. Cut into wedges. Garnish with tomatoes.
