Chicken and Zucchini Parmesian

Number of Servings: 1

Ingredients

    2 Zucchini, sliced
    1 boneless, skinless chicken breast, cooked
    1 T olive oil
    1 garlic clove -minced
    1/2 tsp Mrs Dash garlic and spice seasoning
    4 T Tomato Bruchetta or Italian Tomato Sauce
    1/4 c Mozzarella or Italian Blend cheese - shredded

Directions

slice zucchini, place in microwave safe bowl and toss w/ olive oil, garlic and seasoning.
Wave for approx 3 min until soft.
Drain excess fluid, then add zucchini to microwavable serving bowl.
Slice chicken breast and distribute over zucchini
Top with Tomato Sauce, cheese and microwave an additional 2-3 minutes until hot and cheese has melted.
