Introduction

This is one of my daughter's favorite soup...just lightened a little!

Number of Servings: 8

Ingredients

    *Potato, raw, 3.5 cup diced
    Celery, raw, .33 cup, diced
    Onions, raw, .33 cup, chopped
    Ham, regular (11% fat), .75 cup, diced
    Water, tap, 3.25 cup (8 fl oz)
    *Knorr Chicken Bouillon, 3 tsp
    Pepper, black, 1 tsp
    Butter, unsalted, 2 tbsp
    *Flour, white, .33 cup
    Milk, 1%, 2 cup

Directions

Peel and dice potatoes. Put potatoes, ham, celery, onion and water in pot. Cook until potatoes are tender. Add bouillon and pepper. Melt butter and whisk in flour until it is a paste. Slowly whisk in milk until thick. Pour milk mixture into potatoe pot. Use a potatoe masher to mash the potatoes a little - which make the "soup" a little thicker. This is good even the next day!

  • I used chicken broth and celery salt, and unsweet almond milk. The celery salt made it a bit salty but I didn't have any celery. Also added a bit of garlic powder. - 6/29/13
