Nancy's recipe for Tabouleh

Ingredients

    1 cup Bulghur Wheat
    1.5 cups of boiling water
    1 cucumber seeded and chopped
    1 tomato seeded and chopped
    1/2 cup onion (sweet or green)
    1 cup fresh parsley leaves chopped (Mint leaves can be substituted)
    1 Tbsp. Extra Virgin olive oil
    juice of one fresh lime
    salt and pepper to taste

Directions

In a large bowl place dry bulghur. Pour boiling water on bulghur cover and let sit until water is absorbed about one hour. Prepare cucumber by slicing lengthwise and scooping out seeds with a spoon. cut seeded cucumber into pieces about the size of a corn kernel. Prepare tomato by cutting across mid-section an squeezing the seeds out and disposing them then cut flesh into small pieces like the cucumber. Chop onion. Chop parsley (or fresh mint) leaves. When bulghur has absorbed water add chopped ingredients along with 1 Tbsp. olive oil and squeeze juice of one whole lime into mixture and stir and serve. Salt and pepper to taste.
