Ingredients

    *Boneless, Center Cut Pork Roast, 3 lbs
    sweet raw onion, 2 cup, chopped
    Butternut Squash, 2 cup, cubes
    *Yucon Gold POtatoes, Roasted, 4 large, chunked
    6 oz apricot pineapple preserves

Directions

preheat oven to 350. In a large casserole dish, put roast and then add potatoes and onions, layering so that the flavors blend.

  • I love smothered pork chops! I used to bron mine in garlic and butter first, then add to the pan. FF cream of mushroom works well with this. Definetly going to try! - 1/10/11
