Vegan Spanish Quinoa

Introduction

A substitute for Spanish Rice with an amped up amount of protein! A substitute for Spanish Rice with an amped up amount of protein!
Number of Servings: 4

Ingredients

    1 cup dry quinoa, rinsed
    1 t olive oil
    1/ 2 onion
    1 green bell pepper
    2 cloves garlic, minced
    2 T tomato paste
    2 cups water
    1/2 t oregano
    1/ 2 t chili powder
    1/2 t cumin
    1 cup corn

Directions

serving size: makes Four 1 cup servings

-In a large frying pan, add oil, onion and bell pepper- saute for 2 minutes. Add garlic, saute another minute.
-Add tomato sauce, water and spices. Stir to break down the tomato paste.
-Add quinoa and bring to a boil and cook for 15 minutes or until water dissappears. Cover & simmer another 5 minutes, stirring as needed.
-Add in corn.

-Vegetable broth may be used instead of water for added flavor, but adjust calories accordingly.
