Sesame Lime Stir Fry

Introduction

A very hearty and quick meal served over brown rice. A very hearty and quick meal served over brown rice.

Ingredients

    4 servings
    487 calories per serving

    * Corn Oil, 4 tbsp
    * Lime Juice, 1 lime yields
    * Broccoli, fresh, 3 cup, chopped
    * Carrots, raw, 1 cup, chopped
    * Mushrooms, fresh, 4 medium
    * Onions, raw, 1 cup, chopped
    * Sesame Seeds, 6 tbsp
    * 2 Tablespoons corn starch
    *Brown Rice, long grain, 4 cups cooked

Directions

1. Blend sesame seeds, mushrooms, and oil in a blender or food processor until mixture is smooth (add water if needed)
2. Sautee sesame seed mixture until browned (be careful not to burn) in a skillet over high heat, stirring often
3. Add broccoli, carrots, and onions. Cook until tender.
4. Add the juice of one lime.
5. Add Corn Starch dissolved in water and stir until sauce thichens.
6. Serve over warm brown rice.
