Italian Sausage Soup With Tortellini

Introduction

My husband got this recipe from this little Italian lady where he goes to buy italian sausage. It is so tasty. The sodium is a bit high but if you use unsalted or low salt broth and tomato options it'll be much better. I hope you enjoy it as much as we did. Ingredients

    1 pound italian sausage
    1 cup chopped onions
    garlic to taste
    6 cups beef broth
    1/2 cup water
    2 cups crushed tomatoes
    1/2 tsp basil
    1/2 tsp oregano
    8 oz can tomato sauce
    1 1/2 cup zucchini
    12 ounce frozen cheese filled tortellini
    3 tbsp parsley
    grated parmesan cheese

Directions

Remove sausage from casing and brown in dutch oven, add onions and brown. Add garlic, beef broth, water, tomatoes, basil, oregano, and tomato sauce. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat from soup Stir in zucchini, tortellini, and parsley. Simmer covered for an additional hour (longer the better). Sprinkle parmesan cheese on top of each serving.

  • OMG, this is delicious! The only thing I have to figure out, is how to cut back on the salt content because it's too salty for my taste. I used low sodium broth, hot italian turkey sausage and simmered a Parmesan rind in the soup for the last half hour instead of adding Parmesan to the soup - 1/11/12
