Corn muffins

Number of Servings: 6

Ingredients

    1/2 cup corn meal
    1/2 cup flour
    1 1/2 teaspoons canola oil
    1 teaspoon sugar
    i egg
    3/4 cup non-fat milk
    1/2 teaspoon salt

Directions

Mix all ingredints together (just until blended, don't over-mix). Pour into 6 greased and preheated muffin molds. Bake at 425 until light brown on top, about 20 minutes or so.. Serve hot.
**Note** I use cast iron muffin tins, spray with canola oil and put tins in the oven while it is heating.
