Creamless Cream of Broccoli Cheddar Soup

Introduction

Ingredients

    3 cloves Garlic, chopped
    ~ 3 tbsp Red Onion, chopped
    12 cups Broccoli, chopped
    5 cups Great Northern Beans, cooked
    (or 3 (15 oz.) cans, drained and rinsed)
    3 tsp Better Than Boullion Vegetable Base
    4 cups Water
    2 tsp Basil
    2 tsp Parsley
    1/2 tsp Nutmeg
    1 Bay Leaf
    3.5 oz Cheddar Cheese, cubed

Directions

In a large soup pot, saute onion and garlic in oil. Add broccoli and 1 cup water. Saute/steam until broccoli begins to soften.

At the same time in a small pot, add three cups of water, Better than Boullion, and spices. Bring to a boil. Pour over broccoli in large pot. Add beans and stir contents together. Cover and simmer for 30 minutes or until broccoli breaks apart easily. (Note: It won't look like enough liquid, but if you want a thick, creamy soup, don't add more)

Use an immersion blender (or transfer contents to a blender), and blend until smooth. Stir in cheese on low heat until melted.

Try not to eat it all before it's time to serve!
