25 g leek, chopped (about half a small leek)
1 med yellow onion, chopped
3 lbs tomato, chopped (about 10 med tomatoes)
1 green chili pepper, seeded and chopped (nutritional info based on canned chili peppers, but I couldn't find just a plain green chili pepper entry)
1/4 tsp paprika
1/4 tsp chili powder
4-5 fresh basil leaves
1/2 tsp kosher salt
3 tbsp olive oil
Add tomatoes. Let simmer for about 10 minutes, until tomatoes are fairly mushy and easily cut with a wooden spoon. Add chili, and let the mixture bubble for an additional 5 minutes.
Working in batches if needed, purée mixture in a blender or food processor until a uniform consistency is achieved. Return mixture to pot over med-high heat. Add spices and basil leaves, adjusting to taste. Stirring occasionally, let mixture bubble for another 20 minutes.
