Chicken and rice w/o the rice

Ingredients

    * Olive Oil, 1tbsp
    * 2 Chicken Breast,s no skin
    * Cream of Mushroom Soup, 1can (10.75 oz)
    * Onions, raw, 1 cup, chopped
    * 1/2 cup Bulgur, dry,
    1 & 1/2 cup water
    optional - cheese for top
    Optional - walnuts



    A delicious creamy dish that is both low in fat and calories and rich in "good" carbs from the whole wheat bulgur.

Directions

(makes 6 servings)

1. Cut onion into long strips and sautée in 1 tbsp of Olive oil. For a richer taste, allow the onions to caramelize.
2. While onions sautée, cut 2 chicken breasts into roughly 1 inch chunks.
3. Boil 1 & 1/2 cup water in the microwave. Immediately after the water is boiling, add the raw bulgar to the water to soak for 10 or 15 minutes.
4. Combine ingredients and cook in a 350 degree oven for 45 minutes - 1 1/2 hour (until the chicken is fully cooked and much of the moisture has been absorbed.)

Serving Suggestions
This dish is best served with green beans or cooked broccoli.
To add some extra flavor, add 1/2 cup walnuts to the recipe before baking.
To add some creamy luscious extravaganza, sprinkle on chedder cheese to the top after baking, and broil till the cheese is golden and melted (3-5 minutes usually)

  • It was a first to use the bulgur instead of the rice but the taste came out great. Perhaps cause i was already familiar with bulgur with the taboli salad, but my family would not eat it.
    I will keep this receipe and make this again. - 4/7/08
