Introduction

a wonderful side dish a wonderful side dish
Number of Servings: 9

Ingredients

    2 cups water
    1 cup quinoa
    1/4 cup olive oil
    1/4 cup lemon juice
    3 tomatoes, diced
    1 cucumber, diced
    2 bunches green onions, diced
    2 carrots, grated
    1 cup fresh parsley, chopped

Directions

Cook quinoa
combine all other ingredients in separate bowl.
once quinoa is cooked, allow to cool then stir in to mixture
cover and chill overnight or for 4 hours miimum

SERVING IS A 95CC scoop
