1 lb. Lean Ground Beef
1 Med Onion, chopped
1 can Rotel
1 can Black Beans, undrained
1 can Kidney Beans, undrained (less sodium)
1 can Green Giant Mexicorn, undrained
1 package low-sodium Taco Seasoning
1 package Ranch Dressing mix
2 cups water
Fritos corn chips, sour cream and shredded cheddar cheese for garnish
Transfer beef and onion to stock pot. Add canned items and seasonings. Cook 1-2 hours or in crock pot.
Garnish with sour cream, shredded cheddar cheese, and Fritos corn chips.
Makes 10 1-cup servings.
