Linguine Bolognese

Introduction

Ingredients

    6 oz whole wheat spaghetti
    8 oz ground venison or extralean ground beef
    1 med onion, chopped (optional)
    1/4 c chopped carrot
    2 cloves garlic, minced
    1 tsp dried oregano
    1 med zucchini, chopped
    2 med tomatoes
    1/2 c organic tomato paste
    1/4 c water
    1/4 tsp salt
    3 Tbsp shredded part-skim mozzarella

Directions

1. Prepare pasta per package instructions.
2. Heat large nonstick frying pan over medium-high heat. Add venison and cook, breaking meat into smaller pieces, until no longer pink, 3 to 4 minutes. Stir in carrot, garlic, and oregano. Cook, stirring occasionally, until vegetables start to soften, about 2 minutes. Add zucchini and cook until starting to soften, about 2 minutes. Stir in tomatoes (with juice), tomato paste, and water. Bring to a boil, reduce heat to medium, and simmer until slightly thickened, 12 to 15 minutes. Remove from heat and stir in salt.
3. Serve sauce over drained pasta, and sprinkle with cheese.
