1 1/2 C milk
2 tbsp agave nectar
1 tsp vanilla
8 slices whole wheat bread (about 1/2 lbs)
1 apple chopped
1 tsp cinnamon
1 tsp ginger
1/4 tsp freshly grated nutmeg
2. Trim crusts off 3 bread slices and set aside center. Cut the crusts and rest of the bread into 1 inch squares. Toss the bread with the apples and spices.
3. Coat a loaf pan with cooking spray. Lay the three pieces of bread on the bottom. Put the bread and apple mixture over them. Whisk milk mixture one more time and pour over the bread. Press the bread down with the back of a spoon to make sure it's evenly moist. Cover with parchment paper, then foil and refrigerate for at least 8 hours or up to 24 hours.
4. Preheat oven to 350
5. Bake, covered for 40 minutes. Uncover and continue baking until puffed, about another 20 minutes. Let stand. Remove from pan. Keep upside down, serve in slices with agave nectar squeezed over the top.
