125 ml low fat milk
100 grams soft goats cheese
100 grams chopped mushrooms
100 grams chopped zuchinni
100 grams chopped broccoli
2 red onions
25g unsalted butter
Mix milk, eggs, salt and pepper to taste
Saute onions and butter, add chopped vegetables and cook for 2 mins.
Place vegetable mix in the muffin tin (use cupcake paper inserts) and poor egg mixture over each tart.
Bake in 180degree oven and cook for 25 mins or until golden brown.
