Rosemary and Wine Chicken

Introduction

I based this off the Spark Recipe Garlic Spiked Broccoli and Mushrooms with Rosemary. I added the wild rice, chicken and wine. This was DELICIOUS! I based this off the Spark Recipe Garlic Spiked Broccoli and Mushrooms with Rosemary. I added the wild rice, chicken and wine. This was DELICIOUS!
Number of Servings: 4

Ingredients

    2 tsp Olive Oil
    2-3 garlic cloves, minced
    2 cups sliced mushrooms
    4 cups chopped, fresh broccoli
    1 lb. boneless, skinless chicken breasts
    1/2 cup white wine
    Salt and freshly ground black pepper to taste

Directions

In a large skillet, heat oil over medium heat. Saute garlic for one minute then add mushrooms. Continue to saute for another three minutes. Add the broccoli and continue for another few minutes. Increase heat to high and add the chicken and rosemary and toss around till the chicken has seared on most of it's surfaces. Add the wine and allow it to start to bubble slightly. Cover the pan and lower heat to low and allow to cook thus for a further 5 to 7 minutes or until chicken is cooked through. Check at the 4-5 minute mark to ensure your chicken doesn't get tough.
