3 cups cooked rotini tri-color pasta
1 cup sliced fresh mushrooms
1 cup onion, slivered
1 cup green and red bell peppers, slivered
1 jalapeno pepper, thinly sliced
2 cloves garlic, thinly sliced
1 tsp canola oil
1 cup stewed tomatoes, including liquid
1/4 cup light Italian salad dressing
1 tsp black pepper, freshly group
1 tsp Tony Chachere's Creole Lite seasoning
1 package Tyson Fajita chicken strips
1 1/2 cups fresh mozzarella cheese, cubed
Saute onion, peppers, and mushrooms in oil. Cook 1-2 minutes and add garlic. Cook for 1-2 minutes longer, remove from heat. Add pasta and toss. Add tomatoes, Italian salad dressing, black pepper, creole seasoning and mozzarella cheese and toss. Add chicken (you may need to cut into bite size pieces) and toss.
Serve as is or with freshly grated parmesan cheese and bread of choice.
