Ingredients

1/3 c. chopped chorizo
1 c. chopped ham (precooked)
1/2 c. chopped onion
1 clove garlic
1 tbsp olive oil
2 c. peeled & chopped cooked potatoes
2 c. dry lentils
1 bay leaf
Directions
Heat olive oil in a pot and add garlic and onion, stirring occasionally until tender. Add chorizo, ham, and potatoes. Cook 10 minutes, until the potatoes absorb the flavor of the seasonings.
Examine and rinse the lentils, removing any debris from them. Drain and then add to the pot with 6 c. water and stir. Add bay leaf. Bring to a boil over medium high heat and then lower the heat and allow to simmer for 40 minutes, stirring occasionally. If the lentils become too thick, add more water. Remove bay leaf before serving.
Each serving is approximately 1 1/2 - 2 c., so adjust nutrition information accordingly with how much you actually eat. :)
