Cajun 15 Bean Soup in a slow cooker

Ingredients

    1 20 oz package 15 bean soup mix with cajun spice pack
    1 can diced tomatoes and green chilis (Rotel)
    2 5.5 oz cans of V8 low sodium
    1 large onion
    3 cloves garlic
    1 12 oz can Spam Lite

Directions

Obtain a large sized crock pot. The night before, place beans only in the crock pot and fill pot with water to soak.
In the morning, strain beans and return them to the pot.
Put Rotel and V8 in a blender. Chop onion, placing half in the blender and half in the crockpot. Blend Rotel, V8 and onion until smooth. Add to crock pot
Chop garlic and add to crock pot.
Chop Spam into small chunks and add to crock pot.
Add cajun seasoning pack, fill the rest of the pot with water, and stir.
Cook on low for 8 hours. Come home after work to a warm, healthy meal.
Serves at least 16.
