Introduction

for a heartier pie, add 1 can of black beans and or 1 cup cooked brown or white rice

you can also pour half of corn muffin mix in bottom of pan first, then complete steps as instructed

great alone or with a side salad

Ingredients

    1 box jiffy corn muffin mix
    2 egg whites
    1/4 cup dry nonfat powder milk
    1/3 cup water
    1 lb ground turkey
    1 med onion, diced
    1 12oz bag frozen corn
    1 sml can tomato sauce-1 can water
    salt, pepper, garlic powder, cayenne pepper to taste
    1/2 cup 2% shredded cheese (any blend)
    non-stick spray

Directions

add powder milk, egg whites and 1/3 cup water to corn muffin mix, set aside
brown ground turkey and onions, drain
add salt, pepper, garlic powder & cayenne pepper to taste
add tomato sauce and 1 can water
once heated through, add corn, combine and turn off heat
spray square baking dish with non-stick spray
pour mixture into baking dish
top with half of cheese
pour corn muffin mix over cheese
bake in 350* oven 20 mins. til corn bread done
top with remaining cheese, turn off oven, let sit 10-15 mins.
cut into 9 squares
