Introduction

This is one of my ops over did the veggies recipes.
was suppose to be potato pancakes, but you get your fix for under 100 calories!!!

Number of Servings: 20

Ingredients

    4 Large potatoes
    1 Medium onion
    1 of each green, red, yellow, orange bell peppers
    2 eggs
    4Tbsp(1/4 c) of all purpose flour
    1/4 cup Extra Virgin Olive Oil

Directions

Shredded potatoes, onion, and peppers in a food processor
heat EVOO in non stick skillet over medium to medium high heat.
add egg flour to potato, onion, pepper mix stir well
U can either fry a serving up at time or dump the whole thing in @ once. If you doing per serving use a little EVOO @ time. Fry for 5 mins stir, and repeat until golden brown.

serving size is 1/2 cup
