Stuffed Peppers - lazy man's recipe

Number of Servings: 6

Ingredients

    Cook according to package directions and set aside:
    1/2 c white rice, long grain
    1/2 c brown rice, long grain

    Saute for 8 minutes:
    1 tbsp olive oil
    3 grated carrots
    1 lge onion, chopped
    1 clove garlic, minced
    2 medium red peppers, chopped
    1 tsp basil
    Salt to taste

    Add & cook 5 minutes:
    3 medium tomatoes, chopped

    Add:
    3 c tomato juice, no salt

    Add veggies to rice, mix and bake 30 minutes.
    Sprinkle with 2 tbsp Parmesan cheese, grated


Directions

Serves 6, approximately 1 1/4 c servings.
