Molasses All-Bran Muffins

Introduction

These are my favorite bran muffins. I usually heat them in the microwave for a few seconds before eating to bring out the flavor. Their delicious sweetness makes them enjoyable without having to add butter. These are my favorite bran muffins. I usually heat them in the microwave for a few seconds before eating to bring out the flavor. Their delicious sweetness makes them enjoyable without having to add butter.
Number of Servings: 12

Ingredients

    1 egg, beaten
    1 c skim milk
    3Tbs vegetable (canola) oil
    2Tbs molasses
    1 1/2 c Kellogs All Bran cereal
    1 c flour
    2 ts baking powder
    1 ts salt ( I usually just add a shake of salt)
    1/3 c brown sugar firmly packed

Directions

Preheat oven to 400 degrees. Combine first four ingredients. Stir in bran cereal. Let stand 5 minutes. Combine flour, baking powder and salt. Mix in brown sugar. Add bran mixture to dry ingredients, stirring just until combined. Spray pam or use paper liners in 12 muffin tins. Bake for 20-25 min.
