4 boneless skinless chicken breasts-32 ozs.
12 ozs plain, nonfat yogurt
1 tbsp. ground cumin
1 tbsp. dried oregano
1-2 tsp salt
.5 tsp black pepper
1 tsp red pepper flakes
3 cloves garlic
2 tbsp ginger root
2 cucumbers, peeled, seeds removed
1 cup cider vinegar
.5 cup splenda
Peel cucumbers, cut lengthwise and remove seeds. Slice cucumbers thinly. Combine sugar and vinegar, put cucumber slices in vinegar solution.
Slice chicken thinly.
Serve chicken on tortilla with cucumber salad and yogurt sauce.
