Kraft Smart Pork-Pasta Toss

Introduction

This recipe originally said it was 4 (1.75 cup) servings at 470 calories each, but when I used the nutritional calculator it came out much higher, so I changed it to 6 (1.25 cup) servings for 344 calories. Ingredients

    1/2 lb. whole wheat spaghetti (or other pasta)
    1/4 C Kraft Light Balsamic Vinaigrette Dressing, divided
    1 lb. pork tenderloin, cut into 1 inch pieces
    .5 cup chopped red onions (original recipe was 1 cup)
    3 cloves garlic, minced
    1 1/2 cups cherry tomatoes, halved
    1/3 cup fat-free reduced-sodium chicken broth
    6 cups loosely packed baby spinach leaves
    1 cup Kraft 2% Shredded Italian Three Cheese Blend, divided

Directions

Cook pasta as directed on package, omitting salt. Meanwhile, heat 2 T dressing in large skillet over medium-high heat. Add meat; cook 5-6 minutes or until done, stirring occasionally. Remove from skillet; cover to keep warm.

Add remaining dressing, onions and garlic to skillet; cook and stir 2-3 minutes, or until onions are crisp-tender. Add tomatoes; cook 1 minute. Add broth and meat; stir. Bring to boil, stirring occasionally.

Drain pasta. Add to ingredients in skillet with the spinach and 1/2 cup cheese; mix lightly. Top with remaining cheese.
