Stuffed Pepper

Introduction

This makes 1 serving of vegetarian stuffed pepper. Just double for 2 servings, or triple for 3, etc. Absolutely delicious and no one will know it is meatless. The bulgar wheat is an amazing rice substitute, nutty flavor and texture like brown rice. This makes 1 serving of vegetarian stuffed pepper. Ingredients

    1 green pepper
    1/2 c Boca Meatless Ground Crumbles
    1/4 c Bulgar Wheat
    1/2 c water
    1/2 c Francesco Rinaldi To Be Heathly pasta sauce

Directions

Start the bulgar wheat by putting it into a small sauce pan, cover with the 1/2 cup water and bring to a boil at medium high. Add salt if you like, optional. Once boiling, cover, reduce to medium low and cook for 20 minutes. While that is cooking remove the top from the pepper and take all seeds etc. from the inside out. Keep the pepper whole though. Microwave the Boca crumbles for about 30 seconds on high to thaw. When the bulgar wheat is cooked, mix it with the boca crumbles and pasta sauce. Stuff into pepper and bake in oven at 350 till te pepper is done to your likeness (I usually like mine firmer so I only do about 15 min). Enjoy!!
