Olive Oil, 1 tbsp
Onion, 1/2 cup finely chopped
Garlic, 2 cloves, minched
Roma tomatoes, 4, chopped
Artichoke Hearts in water, 14oz can, drained
Black Olives, canned, sliced, 1 small can drained
Greek Seasoning, 1/2 tsp
Chickpeas (garbanzo beans), 1 1/2 cup
Pepper, black, 1/4 tsp
Lettuce, 2 cups, shredded
Reduced Fat Feta Cheese, 4 oz
Bread, pita, whole-wheat, 4 pita, large
2. Stir in tomato, artichoke hearts, chickpeas, olives, Greek seasoning, and pepper. Cook until everything is heated through.
3. Top with lettuce and cheese. Cook, covered, for 1 to 2 minutes more or until lettuce starts to wilt. Serve with pita slices.
