Introduction

Number of Servings: 1

Ingredients

    1 Egg
    2 Egg whites
    3 Tbls of low fat milk
    25 Grams of low fat cheddar cheese (feta and goats cheese another option)
    3 Chopped large spinach leaves
    1 small chopped mushroom
    10 grams of chopped capsicum

Directions

Whisk the eggs, milk and herbs (optional), salt and peppter in a bowl.
Lightly spray a fying pan with oil and place over medium heat. Add the egg mixture and cook for 30 seconds until the bottom of the omlette has set, then sprinkle remainder of the ingredients. Put the pan under the hot grill for about 1 minute.
