Southwest Crockpot Chicken

Number of Servings: 6


    1 can of black beans, drained and rinsed
    2 cans of whole kernal corn
    1 1/2 whole chicken breasts, skinned and boneless
    1 can of diced Italian Diced tomatoes (if like spicy, use 2 cups of salsa, mild medium or hot as you like it)


Mix corn, black beans and 1 cup of diced tomatoes and then put in crock pot.
Layer chicken breasts on top
Pour remaining diced tomatoes over the top.
Crock on high for 3 hours or low for 5 hours.
Remove chicken, cut up into pieces and then replace in crock pot.
Serve with a nice veggie.
