1/4 cup shortening
1/2 cup (4 oz) unsweetened applesauce
1 large egg
1/2 tsp vanilla extract
1 cup white whole wheat flour
1 1/2 cup old fashioned oats
3/4 cup plus 2 tbs Splenda blend for Baking
2 tbs brown sugar (packed)
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Non-stick cooking spray
Combine shortening, applesauce, egg and vanilla with mixer. Add flour, oats, 3/4 cup Splenda Blend, brown sugar, baking soda, salt and mix until soft dough forms.
Spray baking sheet with non-stick spray. Pour remaining 2 tbs Splenda Blend into small saucer. Dip a slightly moistened, flat-bottom drinking glass into the Splenda Blend, then gently press onto each dough ball to flatten slightly.
Bake for 10 minutes until cookie bottoms are light brown. Cool on a rack then store in a tightly sealed container.
Yield: 18 cookies. Serving: 1 cookie
