Creamy Chili Dip

Introduction

Number of Servings: 20

Ingredients

    1cup Fat Free Sour Cream
    1cup Light cream cheese (room temp)
    1 large Scallions, raw
    1.5cup (1can)your favorite low fat canned chili
    1/2 cup Shredded Cheddar Low Fat
    4 jumbo Chopped Black Olives
    1 cup Cherry tomatoes cut in half
    1 tsp Jalapeño peppers chopped fine (to taste or skip them if you want)

Directions

Serving size=approx 1/4cup
preheat your broiler
Cream together sour cream, and cream cheese in a bowl with electric mixer until sooth. Spread this mixture in the bottom of a shallow baking dish that can go under the broiler. Layer the can of chili on top but mash them in the can a little with a fork to break them up a bit (this doesn't have to be perfect). Sprinkle the scallions evenly over the top and Sprinkle the cheese evenly over all and place this under the broiler until the cheese melts and gets bubbly. When the cheese has melted garnish with the halved cherry tomatoes,Jalapeño and the black olives. I serve this warm as a dip with Whole wheat pita chips, raw veggies or pita bread. This would be awesome on top of a baked potato also.
