Ingredients

    penne, spinach, mushrooms, zucchini, red onion, butter, nutritional yeast, Parmesan cheese, salt, pepper, garlic, turkey bacon

Directions

Saute diced red onion and 2 whole cloves of garlic in butter on med heat. Cook until onions start getting soft, remove garlic. Add sliced mushrooms. Saute. When mushrooms get a little soft add Zucchini. When all veggies are tender add fresh spinach. Cook down for 2-3 minutes. Add cooked Penne pasta. Add teaspoon of nutritional yeast and Parmesan. Mix together.....Add cooked, chopped turkey bacon if desired. Of course than it isn't vegetarian.
