MK Meatless Tomato Sauce (1 serving = 1/2 cup)Submitted by: MARTINEKERR
IntroductionVery simple arrabiata sauce. Goes great in a lasagna and with meatballs. Very simple arrabiata sauce. Goes great in a lasagna and with meatballs.
1400g crushed tomatoes or passata (2x700g bottles)
4 garlic cloves, crushed
2 hot chili peppers, chopped finely *
2 cups onions, chopped finely
1 cup button mushrooms, finely diced
1 shredded carrot (about 1 cup)
1 shredded zucchini (about 1 cup)
125ml red wine
1 tbsp olive oil
* hot peppers - note that not all peppers are created equal. You may want to start with just one and test 'hotness' or omit if making kid friendly sauce.
Saute the onion, garlic and chili peppers in hot oil until soft. Add tomatoes and red wine. Simmer over med-low heat for 1 hour. Salt to taste. Let cool then puree in a blender or with a hand mixer until smooth (no one will know how many veggies there are in here once pureed).
Optional: Spice it up with 1 tbsp of oregano for more 'italian' taste.
