Introduction

Variation to our family favorite Enchilada bake.This is a quick healthy meal. I'll make it ahead of time and pop it in the oven for a super quick dinner when kids have sports to get to. Variation to our family favorite Enchilada bake.This is a quick healthy meal. I'll make it ahead of time and pop it in the oven for a super quick dinner when kids have sports to get to.

Ingredients

    *Turkey, Ground turkey, 93% lean, 16 oz
    *Old El Paso Refried Beans - Vegetarian, 1 cup
    Corn Tortillas, 12 tortilla, medium (approx 6" dia)
    *Herdez Salsa Verde---1 can
    *Cheese, Cabot Vermont 75% Reduced Fat Sharp Cheddar Cheese, 6 oz
    Onions, raw, .5 cup, chopped

Directions

Place toritllas in single layer on cookie sheet and toast under the broiler (low) for 1 min to crisp them up. Flip and toast another min.
Saute onion in skillet for 2-3 minutes. Add turkey until brown. Stir in refried beans.

Layer sauce, tortillas, meat mixture cheese....repeat.

Bake about 40 minutes until hot.
