Introduction
These are my favorite pancakes ever, my mom's recipe except with applesauce instead of oil. I mix up several batches worth of the dry ingrediants and keep it on hand. Ingredients

1/2 C Whole wheat flour
1/2 C Corn meal
1 tsp baking soda
1 C skim milk
2 Eggs
1/4 C unsweetened applesauce
Directions
Mix the dry ingrediants and wet ingrediants seperately. Then mix into one bowl well. Using an ice cream scoop, pour batter onto a sprayed griddle, about 4 pancakes at a time. When bubble begin to form, flip them over and cook for about a minute longer. Makes about 16 2.5in diameter pancakes.
