Introduction

Number of Servings: 6

Ingredients

    6oz elbow macaroni
    2 beaten egg yolks
    1 1/4 c skim milk
    2 tbsp flour
    1/2 c chopped sweet peppers
    1/2 c shredded carrots
    1 tsp dried basil
    1/8 tsp pepper
    1 1/2 c shredded cheddar, jack or swiss cheese
    1 1/2 c soft bread crumbs (2 slices bread)
    4 egg whites

Directions

1.) Cook pasta until al dente
2.) In a large bowl combine egg yolks, milk, and flour; beat unil mixed. Add sweet pepper, carrots, basil and pepper. Stir in drained pasta, cheese, and 1 cup of bread crumbs. In a medium bowl, beat egg whites with and electric mixer on high until stiff peaks form.; fold into pasta mixture. Transfer to a greased, shallow 2 quart baking dish. Sprinkle remaining bread crumbs on top.
3.) Bake @ 350 for 35 minutes or until puffed and knife inserted near center comes out clean.
