Curry Chicken and Quinoa

Introduction

Number of Servings: 2

Ingredients

    2 T Olive Oil
    1 T Whole Wheat Flour
    1 cup Vegetable Broth
    1 Medium Onion, diced
    2 Chicken Breasts
    1/2 cup uncooked Quinoa
    2 T Curry Powder
    Salt, to taste

Directions

Coat chicken with 1 T olive oil and 1 T curry powder. Bake in oven at 350°F for 20 to 30 minutes until internal temperature reaches 180°F.

Heat 1/2 cup vegetable broth to boiling (2.5 min in microwave), add quinoa, cover and let liquid absorb while chicken cooks.

When the chicken is done, cut into cubes. Set aside. Sauté onion in 1 T olive oil until translucent. Stir in flour and curry powder. Stir in vegetable broth to make a sauce. Add chicken and quinoa and stir until warmed. Serve.

Makes 2 servings.

To save time, make the chicken and quinoa ahead of time or use leftovers.
