1/4 cup of chopped jalapenos peppers
1/3 cup of lime juice
1 tbsp of white vinegar
1/2 tbsp of honey dijon mustard
1/4 tsp of garlic powder
1/4 tsp of grated lemon peel
1/2 tsp of ground cumin
1 can (19 oz.) red kidney beans drained (unico)
1 cup of frozen corn (thawed)
1/4 cup of green salsa (la costensa)
1/4 cup of green onions
2 tbsp of cilantro
In a large resealable bag, combine first 8 ingredients; add beans and corn. Seal bag and turn to coat;refrigerate overnight.
Drian and discard marinate. Place beans and corn in a large microwave dish. Add salsa, onions, and cilantro. Cover and microwave on high for 5-6 mins.
Spoon about 1/4 cup on a 4 inch corn tortilla (la tapatia brand)
