Baked Chicken and Spinach

Introduction

This is easy and quick to make! This goes really well with wild rice and steamed veggies. This is easy and quick to make! This goes really well with wild rice and steamed veggies.
Number of Servings: 4

Ingredients

    1lb Boneless, skinless chicken breast
    1 onion diced or sliced
    2 garlic cloves minced
    1 Tbls Garlic powder
    1 Tsp Onion powder
    1 cup low sodium Chicken broth

Directions

Wash the Chicken and set aside. Lay out foil on a jelly roll cooking sheet. Make sure there is enough foil so that you can close it up on the sides and the top so that the chicken broth will stay inside the foil. squeeze excess water out of the spinach. Lay the spinach down on the foil first. Make 4 small piles of spinach, one for each piece of chicken. Lay the onion down next on top of the spinach piles. Place the chicken down on top of the spinach piles. Pour chicken broth over the whole thing. Spread the minced garlic over the chicken and massage it into the meat. Sprinkle the Garlic and onion powder over each piece of chicken. sprinkle with salt and pepper. Bake at 350 for 35-40 minutes or until the chicken is done in the thickest part of the meat. Enjoy!
