Dutch Babies

Introduction

One of my all time favorite breakfast treats growing up!! Now I made it fit to my healthy life style!! The coconut oil gives it a great flavor. And don't be put off by the high fat content, it's the GOOD fat (from the unrefined coconut oil) that our bodies need to function properly, so EAT UP!! Ingredients

1/4 C Extra Virgin Coconut Oil (you can use regular butter too)
3/4 C Milk (I use organic milk, or kifer)
3/4 C Whole Wheat Pastry Flour
    3 Organic Eggs
5-8 Drops Liquid Stevia (Vanilla Creme is our favorite)

Directions

Use a cast iron pan. Place pan in oven while preheating to 425. When preheated add coconut oil and let it melt. While coconut oil is melting mix in blender or stir together remaining ingredients until it's mixed well. Poor in pan and bake 20-25 minutes. If you have kiddos they will love to watch them rise and get big and puffy! We like our served with hazelnut chocolate butter, fruit or pure maple syrup! This is a perfect breakfast treat!
