Another based on a Cook's Illustrated recipe, but tweaked for size and on-hand ingredients. (I made this to serve only 4 and swapped in almonds for their pecans.) Ingredients

2 Tbsp. unsalted butter
1 cup whole-wheat couscous
3/4 cup water
1/2 cup low-sodium chicken broth
1/2 tsp. salt
Ground black pepper
1 tsp. ground garam masala
1/8 tsp. cayenne
2 cloves garlic, minced
1/4 cup chopped dried cherries
1/4 cup chopped toasted almonds
2 small scallions, chopped
1-2 Tbsp. fresh lemon juice
Directions
Heat butter in medium saucepan over medium-high heat. When foaming subsides, add couscous, garlic, garam masala, cayenne and cherries and cook, stirring frequently, until grains are just beginning to brown, about 5 minutes. Add water, broth and salt; stir briefly to combine, cover and remove pan from heat. Let stand until grains are tender, about 7 minutes, Uncover and fluff with fork. Stir in almonds, scallions and lemon juice, season to taste with pepper and serve.
Serves 4 as a side dish.
