Cheeseburger Soup

Ingredients

    2 lbs extra lean ground beef
    3/4 c chopped onion
    4 C diced potatoes
    4 C low fat chicken broth'
    1 1/2 c skim milk
    4 Tbls margarine
    1/4 C flour
    1 tsp basil
    1 tsp parsley
    1 tsp black pepper
    2 tsp salt
    8 oz velveeta 2% low fat
    1/4 C light sour cream

Directions

Brown hamburger in large stock pot, drain and rinse. In stock pan saute onion till soft. Add broth, burger, potatoes, basil, parsley, pepper, and salt. Bring to low boil & cook till potatoes are almost tender. In small sauce pan melt butter and add flour and cook till bubbly. stir in milk and cook on low for a couple of minutes. Slowly add to soup, cook a few minutes. add cheese, cook on low until cheese melts. Remove from heat and add sour cream.
