PEANUT BUTTER BANANA BREAD

Ingredients

    1.5 cups mashed ripe banana
    1/3 cup greek fat free plain yogurt
    1/3 cup creamy peanut butter
    3 tbsp unsweetened applesauce or pure pumpkin
    2 large eggs
    1/2 cup stevia in the raw
    1/4 cup splenda brown sugar blend
    1.5 cup whole wheat pastry flour
    1/4 cup ground flaxseed
    3/4 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/8 tsp allspice
    2 tbsp chopped dry roasted peanuts
    cooking spray

Directions

makes 12 slices/ cooking time is approximate. i have taken bread out in 50 minutes. want to make sure it does not dry out.

1. preheat oven to 350
2. combine first 5 ingredients in large bowl; beat w mixer at med speed. add stevia and brown sugar; beat until blended
3. spoon flour into measuring cups ; level with knife. combine flour and next 5 ingredients up to allspice... in small bowl.
4. add flour mixture to banana mixture; beat until blended.
5. pour batter into greased loaf pan (9x5)
6. bake at 350 for 60 min or until toothpick inserted comes out clean . remove from oven... cool.
