Taco Salad

Introduction

Nutritional Info includes 1 serving, however in my ingredients list I will include the entire recipe (serves 4). Sodium is high, however I drain and rinse my beans so I know this lowers the sodium more than listed. Dairy products also add sodium, so those can be eliminated. I try to use this as a dinner after a low sodium day (that way I don't exceed my daily limit of 2300 mg). ENJOY! Ingredients

    For entire 4 serving recipe (Nutrition Info includes one serving only):

    2 Oz Yellow Corn Chips, crumbled
    8 T Non-Fat Sour Cream
    1 Lb Ground Turkey
    8 Cups Shredded Romaine Lettuce\
    1 Large White Onion, diced
    1 cup Low Moisture Part-Skim Mozzarella Cheeze
    1 can Bush's Black Beans, drained and rinsed
    Chef Meg's Taco Seasoning (sparkrecipes.com)

Directions

Brown turkey until cooked through. Add seasoning, 1 cup water, diced onion, and black beans. Simmer for ten minutes or until mixture has thickened and onions are soft. Remove from heat.

Pile lettuce on a plate. Add 1/4 meat mixture and top with chips, sour cream, and cheese. Serve. Entire recipe serves 4.

Other ingredients may be added as desired. Additional toppings may include: Kidney beans, olives, tomato, salsa, jalapenos, etc.
