Beef Stroganoff

Number of Servings: 12

Ingredients

    2c onion, chopped
    8 oz mushrooms, chopped
    2c carrots, chopped
    2 lb beef (stew meat or chuck)- raw weight
    1/2c flour
    2 tbsp olive oil
    14.5 oz can beef broth
    10.5 oz can beef consomme
    6 oz can tomato paste
    1/2c red wine
    2c water

Directions

1. Saute onions and mushrooms with 1 tbsp olive oil. set aside.

2. Dredge beef in flour then brown with second tbsp olive oil.

3. Deglaze pan with red wine, then add onions, mushrooms, carrots, beef broth, consomme, water and tomato paste.

simmer until carrots are tender. If you like a thicker sauce either add less water or a thickener like more flour or cornstarch.

serve over noodles (nutritional information for noodles not included)

Makes twelve 1c servings.

**I guessed at the prep and cooking time because after I was done browning the meat, I tossed it in the crockpot to cook on low while I was at work. ;)
