28 oz boneless, skinless chicken thighs
1 cup light coconut milk
1/4 cup lime juice
1/3 cup honey
1/3 cup light soy sauce
3 cloves garlic, crushed
2-1/2 TBS Chinese five-spice powder
Combine marinade ingredients and allow chicken to marinate 15 minutes to several hours.
Remove from marinade, place in a single layer on a broiler pan, and bake until cooked through, 20 - 30 minutes.
While chicken is cooking, pour leftover marinade into a small pot and boil gently, until slightly thickened.
Serve chicken with a spoonful of (cooked) marinade. Great with rice and broccoli!
