Chocolate Peanut Butter Pudding

Ingredients

2 cups Milk, 1%
1 envelope unflavored gelatin
2 tbsp STEVIVA blend (or a pinch of stevia, or 4 stevia packets)
pinch sea salt
1/3 cup dark cacao powder
1 tbsp neatural peanut butter
Directions
Pour 1/2 cup of the milk into a small bowl. Sprinkle gelatin on top and set aside until softened, about 5 minutes.
Meanwhile, combine STEVIVA, cacao powder, and salt in a medium saucepan; whisk in remaining milk. Bring cacao mixture to a boil over medium heat, whisking constantly. Remove from heat, add peanut butter. Whisk until smooth.
Add gelatin mixture to cacao mixture and stir until dissolved. Divide among 4 serving cups. Cover each cup with plastic wrap and chill in the coldest part of the refrigerator until firm, about 3 hours or overnight.
Makes 4 servings
OPTION: Garnish with broken nuts, shaved chocolate or coconut curls.
